Influence on yield and quality of tencha by different N-fertilizer application

The influence of the application amounts of different nitrogen fertilizer on the yield and quality of tencha, which is the raw material of matcha, is examined for the 5 years from 2000 to 2004. Four experimental plots were designed as follows. ,nitrogen application amounts of 900kgha-1, 600kg, 300kg and 0kg respectively. 1. The 900kg plot had the highest yield on the bush with natural shape and reduced with the decrease of application amounts of nitrogen fertilizer. The 600kg plot had the highest yield on the bush with arc shape. The yield of the first crop cultivated by the bush with natural shape was superior to that cultivated by the bush with arc shape. 2. The total nitrogen content in the tencha on the bush with natural shape reduced with the decrease of application amounts of nitrogen fertilizer throughout experimental periods. The total nitrogen content on the bush with arc shape also reduced with the decrease of application amounts of nitrogen fertilizer except for 2002. 3. The content of amino acid in the tencha reduced with the decrease of application amounts of nitrogen fertilizer on both bush shapes. The 900kg plot had the minimum tannin contents on both bush shapes. 4. The total score of the sensory test of tencha on 900kg plot was nearly equal to that on 600kg plot on the bush with natural shape. The total score of the sensory test reduced with the decrease of application amounts of nitrogen fertilizer on the bush with arc shape. 5. Under the condition of the conventional cultured system the decrease of application amounts of nitrogen fertilizer led to the reduction of yield and/or the quality of tencha.
