The content of toxic elements and chloro-organic pesticides in horse tissue grows markedly with the age of animals subject to slaughter. Meat obtained from older horses, older then 17 years may constitute a risk for human health because of excessive acumulation of lead (Pb) and cadmium (and mercury in some cases as well). Therefore, this raw product should be subjectes to detailed chemical analysis
