The goal of the work was estimation of variability of some quality parameters of wheat growing in different habitats and to point out regions of the similar wheat characteristics. Data on wheat quality are the results of testing the samples collected from farms from entire Poland of 1993-02 crops. Samples were tested for: test weight, falling number, protein content, gluten content, Zeleny test and ash content. It was found that the region of growing affects quality characteristics of the wheat grain. Wheat grain collected from I-IV growing regions of Poland have the best quality parameters
