Estimation of differentiation of the ascorbic acid level in the muscular tissue of various genetic forms of swine

The studies examined the influence of genetic factors in the level of ascorbic acid synthesis in the loin muscular tissue m. longissimus dorsi and ham m. adductor femoris of wild boar Sus scrofa and Siamese pigs and their crosses: wild boar (50 percent) x Hampshire (50 percent), Siamese (75 percent) x PLW (25 percent), Siamese (50 percent) x Pulawska (50 percent) and Siamese (25 percent) x PLW (25 percent) x PL (50 percent). The highest level of vitamin C synthesis in the muscles of loin and ham was observed in wild boars whereas the lowest was observed in Siamese (50 percent) x Pulawska (50 percent) crosses. The genetic groups of pigs varied in their intensity of ascorbic acid synthesis in the muscular tissue of ham and loin. There were also differences in vitamin C content established between the tissues within a genetic group. Loin proved to the muscles with higher content of ascorbic acid.
