Results of comparative study of the parameters of accumulation of bioflavonoids and phenol carbolic acids in carrot (Daucus carota), table beet (Beta vulgaris) and late cabbage (Brassica oleraceae) after application of various types and doses of mineral and organic (in case of table beet) fertilizers in the conditions of 10-variant field experiment on sod-podzolic light loamy soils in Belarus are presented. It is shown that concentration of the mineral background exercises the predominantly abscopal action on accumulation of phenol compounds in vegetable products but it do not exercise influence on the content flavonols in cabbage and carrot. It favors the lowering of the level of bioflavonoids content in all studied cultures (in carrot – on 14-16%, in beet – on 7-33%, in cabbage – on 8-36%), lowering on catechines (in carrot – on 9-17%, in beet – on 6-40%), lowering of flavonols (in beet – on 16-48%), lowering of phenolcarboxylic acids (in carrot – on 13-71%, in cabbage – on 7-15%). The level of accumulation depends on the distinctiveness of response of the cultivated cultures as well as on the type and dose of applied fertilizers. Experiment variants with the least marked lowering of phenol compounds content in the vegetable products are presented. The least concentration of bioflavonoids in carrot is revealed in case of application of both mixture of single fertilizers and chlorine-free fertilizers 13-7-15, in beet – in case of application organic fertilizers together with the mixtures of single fertilizers; in carrot – in case of application of all doses of complex fertilizers 16-12-20 with boron and sulfur
