The notion of agro-produce market of the Republic of Belarus as a complex economic system, which includes markets of agricultural produce, foodstuffs and material-technical resources has been examined. Separating the market of food fats as a large segment of food market has been suggested. The given market was characterized according to its main components: markets of agricultural raw materials, plant oil, animal oil and margarine produce. It was established that the market of food fats of the Republic of Belarus is one of the most important due to its economic and social position among food markets. At the moment within the frame of agroindustrial complex of Belarus the markets of agricultural raw material and the foodstuffs have developed and really functionated. As a separate segment of the food market it is possible to mark out the market of food fats as complete system of economic attitudes which includes the markets of animal both vegetative oils and the market of margarine production. Its non-uniform productive structure causes presence of the complex competitive environment and specificity of functioning. The estimation of the basic suppliers in the market of agricultural raw material shows, that in agrarian sphere production became more active. However the offer of raw materials does not satisfy demand of the processing enterprises in full measure. Now increasing volumes of manufacture of vegetable oils occurs in quicker rates. The consumer demand for vegetable oil in republic is also characterized by positive dynamics therefore animal oil and margarine production (goods-substitutes) lost their market positions, and their consumption mismatches to physiological norms. As a whole the market of food fats is one of priority on the economic and social value among the grocery markets of Belarus that testifies to necessity of carrying out of the further research in the field of its formation and functioning
