In sugar industry, sucrose is determining by polarometric method and accuracy of this method depended to the moisture content of beet pulp. This experiment was conducted to determine the relationship between pulp weights of various water contents with the volume of clarifying agent. Sugar beet variety 'IC' was planted in early spring 2003 at experimental grounds of Sugar Beet Seed Institute in Karaj. At harvest time, 60 beet samples (50 beet roots in each sample) were selected randomly from the field. Each sample washed and divided in two groups of ten and fifty. In each ten samples, 400 grams pulp was taken randomly using a Venema system. Then 50 grams of the 400 grams of each sample was separated and immediately and the sugar content and the concentrations of potassium (K), sodium (Na) and amino nitrogen (N) were determined. The remaining 350 grams of the ten samples were mixed together where, pulp weight of new sample get 3500 grams. Then 30 samples of 100 grams were taken from the new sample. Those 30 samples were randomly divided in three groups (each group include 10 samples). All 30 samples were dried in hot oven and the reduction weight of each sample was calculated. The amount of 33, 66 and 100 percent of reduced weight, distillated water were added to each ten dry sample. The second group of fifty samples were randomly divided in five groups (each group include 10 samples) and were stored for 10, 20, 30, 40 and 50 days in room temperature (13 ±5 o C). After that, each sample weighed and 100 grams pulp were taken by Venema system and immediately analyzed for quality parameters. The results showed that sugar content and impurities such as K, Na and N increased significantly by decreasing of pulp moisture content. When, pulp moisture content decreased from 77% to 69% and 53% the average of sugar content increased from 14.42% to 18.50% and 26.83% respectively. However, the pulp raw juice was not affected. Based the results of this experiment, following equation fitted between volume of lead acetate (A) and pulp moisture content: A=177*B. Which B is the ratio of pulp dry mater to 23 (percent of dry matter in normal sugar beet pulp). A positive correlation also (R 2 =0.89) between total soluble solid (Brix) and sugar content of beet pulp was determined as follow: Y=0.908*X-1.29 which Y indicates sugar content and X is total soluble solid (Brix) in beet juice.
