إنجليزي. The possibilities of survival and multiplication of some pathogenic bacteria (E. coli, S. typhimurium, S. aureus and Listeria monocytogenes) in pesto sauce has been tested. Only L. monocytogenes can survive, but its multiplication is not possible in this substrate. The pesto sauce has to be considered as safe food

Tranne L. monocytogenes, tutti i batteri considerati sono inattivati. L. monocytogenes non si moltiplica. Si sostiene la salubrità del pesto per il consumatore
