Biochemical and functional characteristics of old apple varieties cultivated in Lombardy region [Malus pumila Mill.]

إنجليزي. The aim of the work was to assess the biochemical and functional differences between the old cvs of Lombardy and a widely diffused cv, Golden Delicious. The results demonstrated that there were significant differences between the cvs concerning the composition and the level of biological activity. A very interesting point arising from the results was the higher content of polyphenolic compounds in the old cvs than in Golden Delicious. A statistical analysis was also carried out on the correlation between the composition and the biological activity of the different cvs. As for the old cvs, from the correlation of biochemical and functional analysis it emerged that usually the late harvested cvs had a higher polyphenolic content, which affected the higher antiradical activity on DPPH. On the other hand, in the early harvested cvs there was a higher protective activity concerning ascorbic acid, which had a significant correlation with the lower chlorogenic acid content

I risultati hanno dimostrato l'esistenza di differenze significative fra le cv riguardo alla composizione e al livello di attività biologica. Un punto molto interessante che emerge dai risultati era il maggior contenuto di composti polifenolici nelle vecchie cv rispetto alla Golden Delicious. E' stata pure effettuata un'analisi statistica sulla correlazione fra la composizione e l'attività biologica delle diverse cv. Per quanto riguardava le vecchie cv, dalla correlazione dell'analisi biochimica e funzionale è emerso che di norma le cv tardive presentavano un maggior contenuto di polifenoli, che influenzava la più elevata attività antiradicalica, misurata con il DPPH. Dall'altro lato, nelle cv a raccolta precoce esisteva un'attività protettiva più alta concernente l'acido ascorbico, che presentava una correlazione significativa con il minor contenuto di acido clorogenico.]
