Content of nutrients and minerals in pea (Pisum sativum), grass pea (Lathyrus sativus), Lentil (Lens culinaris) and soybean (Glycine max) seeds

The content of dry matter, crude ash, crude protein, crude fibre, ether extract, fibre fractions (NDF, ADF, ADL), fatty acids (14:0, 16:0, 16:1, 18:0,18:1, 18:2, 18:3, 20:1) and minerals (Ca, K, Na, Mg, P, Cu, Zn, Fe, Mn) was determined in the following legume seeds: pea (Pisum sativum) var. Agra and Granit, grass pea (Lathyrus sativus) var. Derek and Krab, lentil (Lens culinars) var. small seeds population and Trebiszowska and soybean (Glycine max) var. Aldana and Polan. The content of crude protein in both varieties of pea as well as Trebiszowska variety of lentil was at a similar (21.0-24.4 percent) level. A considerably higher content of this nutrient (28.5 percent) was characteristic of the small seeds variety of lentil and also both varieties of soybean seeds - Aldana (32.3 percent) and Polan (35.8 percent). The lowest crude fibre content (4.1 percent) was noted in Trebiszowska var. of lentil. A much higher content of this nutrient was foud in soybean 11.5 and 12.1 percent in Aldana and Polan varties, respectively. Trebiszowska var. of lentil contained the lowest level (56.5 percent) of polyunsaturated fatty acids (PUFA) in the sum of fatty acids (FA). A higher level of PUFA was observed in Derek variety (65.9 percent) and the higest in Krab variety (67.0 percent) of grass pea seeds. In all the examined seeds a relatively low content of calcium was found from 0.2 g/kg d.m. in both varieties of pea to 1.3 g/kg DM in Krab variety of grass pea
