Interaction of sodium nitrite and lycopene in the in vitro and in vivo conditions

Lycopene, as a strong antioxidant, limited oxidative properties of sodium nitrite both in vitro and in vivo conditions. Lycopene decreased the content of nitrities in gastric juice in vitro, independent of lycopene dose added to sample. Simultaneously, sodium nitrite reduced the level of lycopene in gastric juice. In the in vivo conditions the protective influence of lycopene in the rats intoxicated with sodium nitrite expressed by reduction in the methemoglobin as well as nitrite and nitrate ions concentration in blood. In human experiment a statistically significant adverse effect of sodium nitrite intake on lycopene level in serum was found
