[Quality of chicken breast meat fed enriched corn meal and extruded enriched corn meal]

Quality - nutritive, technological and sensory, of chicken breast meat was investigated. Chickens (broiler type Ross 308) were fed different corn products. The control group of broilers was fed corn meal and the experimental one enriched corn meal e.g. extruded enriched corn meal. There was no difference of nutritive and sensory characteristics of breast meat between the control (1st) and experimental (2nd and 3rd) groups. The technological meat quality reffers to somewhat lower meat quality. Namely, analyzing the values of pH sub(u) and L*, according to parameters and criteria for estimation of meat quality, it was found that the characteristics of breast meat were on average changed, and the meat is PSE quality.
