The aim of this thesis was to establish an empiric model, which describes the kinetics of apricot osmotic drying. In accordance with the stated aim, the set of tests with variety Novosadska rodna apricot halves were conducted. The temperature and osmotic solution concentration were affected factors, varied at two levels. Experiments were conducted in order to enable statistical analysis of influential factors on to osmotic drying kinetics. The dispersive analysis was employed for verifying assumption hypothesis about the temperature and solution concentration influence on to apricot osmotic drying. It was confirmed influential that the chosen levels are significant. The analysis was accompanied by regression analysis, in order to establish mathematical model that will describes changes in apricot halves moisture during the osmotic drying process, depending on process duration and influential factors. The regression analysis was calculated on two mathematical models. The fitting adequacy assessment of chosen models was achieved by correlation coefficient. High value of correlation coefficient was obtained for one of the tested models and, therefore, it is consider the mathematical model is acceptable.
