Osmotic treatment of shaped carrot in sucrose and molasses

Possibility of sugar beet molasses and sucrose solutions for succesive osmotic dehydratation of carrot is a suitable drying pretreatment which reduces volume of carrot and apple 50% and 35% respectively. In the process of osmotic dehydratation water loss is greater in sucrose solutions, than in molasses. Water loss solid gain ratio is equal concerning both osmotic solutions. The application of molasses as an alternative solution is justified and opens new possibilities for inovations at the area of new dehydrated products.
