Estimation of the dietary intake of sorbic acid and sorbates

The intake of sorbic acid and its salts by an average diet of Slovak consumers (for persons of a weight of 60 and 80 kg) was estimated. Two models of one-week menu were created utilizing Food Data Bank: the first one based on food consumption statistics data and another one based on scientifically recommended food consumption data. The intake of sorbic acid and sorbates was estimated at the presumption of their presence in maximum permitted limits in individual foodstufs. It is obvious that the results are over-estimated, however they demonstrate that the real intake of these food additives is fairly low and does not exceed the fourth part of the ADI value (acceptable daily intake). Consumers meeting scientific nutrition recommendations are exposed to similar dietary doses of sorbic acid and sorbates.
