Comparison of the growth parameters, yield, and selected qualitative parameters of muslucature in [broiler chicken] meat hybrids

Growth parameters, yield, some parameters of chemical composition, and sensoric properties of the meat of hybrids ISA 257 and ISA 220 were compared. The broiler chickens were killed on day 45 of fattening and mean live weight was 1890 g and 2507 g in the group ISA 257 and ISA 220, respectively. The mean weight of the poultry carcasss was also lower in the group ISA 257 (1249 g) in comparison with ISA 220 (1,676 g). The value of yield was slightly higher in hybrids ISA 220 (66.64%) as compared to those of ISA 257 (66.06%). The mean yield of the other parts (thighs, thigh musculature, wings, skeleton) was higher in the ISA 257. Greater differences were recorded in the content of water and fat. Broiler chickens of the hybrid ISA 220 contained higher amount of water in the brest musculature. The results also revealed better sensoric acceptance of the meat of ISA 257. In conclusion it can be stated that the intermediate type of broiler chickens can suitable supplement an assortment of poultry meat, and to offer a consumer a certain qualitative variation in nutrition.
