Age dinamics in the histological structure of the skeleton muscles and meat quality of rabbits

It was found that the average diameter of the muscle fibers from m. Longissimus and from m. Semimembranosus increased to 120 days of age very intensively. The increase in the average muscle diameter with increasing of age corresponded to the high growth intensity of rabbits. With the increase of age the dark muscle fibers were distributed one by one in the primary muscle fascicles. This was very well expressed for the animals at 120 days of age. The average cross section area of the primary muscle fibers increased with age because of the increase in the thickness of muscle fibers and deposing of intramuscular fat tissue around them. The content of dry matter in the meat increased with age. The values of pH of m. Longissimus and m. Semimembranosus showed that the rate of the glicoliptic processes was very fast and for 24 hours reached their final values.
