[Chokeberry as promising raw material for complex processing]

Research results of the chemical and mineral compounds of fruits and extracts of (Aronia melanocarpa) black chokeberry varieties Venisa and Nadzeya are presented. The samples were selected at the Institute for Fruit Growing. The results have shown that fruits and extracts have high contents of sugar, phenolic compounds, calcium and might be used for the production of functional products containing juices. Chemical compounds of fruits is characterized by the following indices: dry matters - 15,4 – 16,1%, vitamin C - 21,57 – 33,5 mg/100 g, calcium – 125,93 – 162,17; iron – 2,43 – 4,01; zinc – 0,41 – 0,52; copper – 0,28 – 0,35 mg/100 g. Due to high sugar acid index (6,26 – 6,76%) the studied varieties Venisa and Nadzeya can be recommended for canned production with minimum sugar content. The high content of vitamin P in these varieties (823 mg/100 g) determines medicinal properties of (Aronia melanocarpa) fruits. The extracts at juice production (of the first extraction) and at fruit wines production have made 40%. Extracts are rich of organic acids, sugar, polyphenol compounds, micro- and macroelements.
