[Comparative assessment of mountain ASH (Sorbus aucuparia L.) hybrid forms on biochemical composition of fruit in Belarus]

For the first time a comparative assessment of the accumulation of organic acids, soluble sugars, pectines, and phenolic compounds in fruits of four hybrids and one typical forms of Sorbus aucuparia has been performed. Results of biochemical screening of these forms have revealed a number of essential advantages of its hybrid forms concerning their typical analogue accepted as the standard of comparison, on vitamin and nutritional value of fruits. All of them were characterized by higher level of sugar content on a background of the smaller content of organic acids and as a result their sweeter taste. Thus, absolute positive changes in pectines complex of Sorbus aucuparia fruits were not revealed. Alongside with this the majority of hybrids differed from the typical form of Sorbus aucuparia by higher content of phenolic carboxylic acids at opposite character of distinctions in bioflavonoids accumulation at forms G-1 and G-2 on the one hand, and G-4 and G-5 – on the other hand. The promising forms of cultivation and regional introduction as potential source of useful substances are the following: Sorbus aucuparia hybrid forms: G-l (vitamin C, pectines and bioflavonoids), G-2 (soluble sugars and catechines), G-4 (phenolic carboxylic acids, monosaccharides, pectines and anthocyanin pigments). Hybrid G-5 seems to be the least promising. Its fruits can be considered as a possible source of saccharas and hydropectines only
