[Biochemical compound of raspberry fruit]

Research data of biochemical compound of red, yellow, black and remontant fruiting raspberries are presented. Evaluation of the raspberries by the following biochemical indices is made: soluble dry matter, acidity, ascorbic acid, sugar, pectines, phenolic compounds and potassium. It was found out that yellow fruiting raspberries contain larger quantity of soluble dry matters, sugars, pectines. They are marked out by higher sugar acid index. These forms are especially valuable for people disposed to allergy. But yellow fruiting raspberries yield to another studied samples in ascorbic acid and potassium content. Hybrid 1-12 is notable for its properties among studied samples. Red fruiting raspberries are marked out by ascorbic acid content. Variety Willamette is notable for its properties among studied samples. Black fruiting variety Cumberlend is distinguished by high content of phenolic compounds sum. Remontant varieties are characterized by high potassium content. Variety Babye leto-2 is markd out among studied samples
