إنجليزي. Barley and malt to be used in malting and brewing processes must satisfy some important analytical standards. The quality of the raw materials has a great influence on the final product. It is important to use reliable and rapid tests to verify the quality of barley and malt. On the other hand, it is also important to have precise and fine analytical procedures to determine some chemical parameters. In this paper the most important chemical and physical analyses to be carried out on barley and malt are described

La qualità della materia prima si ripercuote infatti sul prodotto finito e nelle diverse fasi di filiera. E' necessario poter disporre, da un lato, di test di rapida valutazione che consentano all'industria di verificare se l'orzo e il malto rispettano le specifiche di produzione, dall'altro di analisi più accurate per verificare ulteriori parametri di più impegnativa determinazione.
