Tocols in tetraploid wheat: their location in the kernel and evolution during milling and pasta processing

إنجليزي. Mediterranean diet contains cereals in the form of pasta, bread, and rice that are rich in antioxidant compounds such as tocols, carotenoids, and flavonoids. In this research, the amount of tocols found in cooked and uncooked pasta samples obtained from different cereals (durum wheat, spelt and a blend of durum wheat and barley) is shown. It was observed a widespread tocols loss as consequence of pasta making, and, after one month, the tocols loss was further increased with values ranging from 8 to 40%. As to durum wheat pasta, it was observed that, nevertheless it suffered the greatest loss (40%), even after one month it showed the highest tocols content. Lower values were observed for pasta made with the blend of durum wheat semolina and barley and for the two samples of pasta made by spelt. Cooking reduced the amount of tocols, even if with different extent for the analyzed samples. Concerning the amount of tocopherols and tocotrienols observed in the different samples (after one month both in cooked and uncooked pasta), a lower loss for tocotrienols fraction was observed. It was also shown that tocopherol fraction, and alpha-tocopherol in particular, are concentrated in the germ, while tocotrienols are prevalent in the endosperm

I cereali presenti nella dieta mediterranea, quali pasta, pane e riso, costituiscono un valido veicolo per sostanze a elevato potere antiossidante come tocoli, carotenoidi e flavonoidi. In questo lavoro vengono presentati i contenuti di tocoli rintracciati nelle paste crude e cotte realizzate con diversi tipi di cereali. E' stato osservato un calo generale per effetto del processo di pastificazione e, dopo un mese di conservazione, la concentrazione dei tocoli diminuiva ulteriormente, in entità variabile dall'8 al 40%. In particolare, è stato osservato che la pasta di frumento duro, nonostante avesse registrato il calo più importante (40%), era quella che conservava la concentrazione più elevata di tocoli anche dopo un mese di conservazione, seguita dalla pasta arricchita con l'orzo e dalle paste di farro. Durante la cottura, come atteso, il contenuto di sostanze antiossidanti era ulteriormente ridotto, con differenze tra i campioni. Osservando in dettaglio l'effetto della conservazione sul comportamento delle due frazioni separate, tocoferoli e tocotrienoli, nei diversi campioni di pasta cruda e cotta si notava che la frazione dei tocotrienoli subisce una riduzione inferiore rispetto ai tocoferoli. Infine, uno studio parallelo ha evidenziato che i tocoferoli e, in particolare, l'isomero alfa, sono prevalentemente concentrati nel germe, mentre i tocotrienoli sono prevalenti nell'endosperma
