إنجليزي. The Regulation CE no. 852/04 introduces the Good Hygienic Practice Guides, which represent an efficacious solution to preserve acceptable sanitary risk levels on food. In a Chamois milk goat farm producing raw milk cheese, a contamination by S. aureus was detected. The purpose was to find the source of contamination and to determine corrective actions. The flow diagram of the process was examined and the following control points were identified: 1) flock health; 2) milking; 3) milk collection and preservation; 4) curd and cheese. The origin of S. aureus contamination was due to the occurrence of chronic intramammary infections, to milk handling by operators' hands and to the time passed between milking and decanting into the cooling tank. For the revision of the self-control plan, sanitary interventions were suggested, namely the use of a cooling tank inside the milking area, of liquid soap for hand cleaning and/or of gloves for the operations who imply the contact of hands with milk

Il Regolamento CE n. 852/04 ha introdotto i Manuali di corretta prassi igienica, che rappresentano una soluzione efficace per limitare i rischi igienico-sanitari negli alimenti. In un'azienda che alleva capre Camosciate e ne trasforma il latte in formaggi freschi a latte crudo è stata accertata una contaminazione da S. aureus. Il fine del presente studio è stato quello di trovare le cause della contaminazione e determinare le azioni correttive. Per fare ciò è stato esaminato il diagramma di flusso del processo, evidenziando i seguenti punti di controllo: 1) sanità del gregge; 2) mungitura; 3) raccolta e conservazione del latte; 4) cagliata e formaggio. L'origine della contaminazione da S. aureus era dovuta alla presenza di infezioni intramammarie croniche, al contatto del latte con le mani degli operatori e al tempo intercorrente tra mungitura e travaso del latte nel tank refrigerante. Nella revisione del Piano di autocontrollo sono stati suggeriti interventi di carattere sanitario e, precisamente, l'utilizzo di un tank refrigerante all'interno dell'area di mungitura, di sapone liquido per la pulizia delle mani e/o di guanti per tutte le operazioni che comportano il contatto delle mani con il latte
