Effective reduction of the natural microbial population on cabbage [Brassica oleracea] with the combination of sodium hypochlorite solution and a chemical or physical treatment

The existence of a biofilm consisting of bacteria and yeasts on the surface of cabbage leaves was observed by scanning electron microscopy. This suggested that the biofilm occurring on the surface would inhibit the effect of sodium hypochlorite solution on reducing the bacterial population on fresh cabbage. Thus, we determined whether the biocidal efficacy of the sodium hypochlorite solution combined with a chemical or physical treatment applied sequentially would be greater than that of individual applications on fresh vegetables. The treatments combining sodium hypochlorite solution and evacuation or surfactants were done to remove air bubbles left on the surface of cabbage leaves dipped in the solution. The combination with evacuation decreased the bacterial counts to about 1/20 of that of the treatment with sodium hypochlorite solution alone. However, there were no significant differences in the reduction of bacterial counts on cabbage leaves between the treatment with only sodium hypochlorite solution and that in combination with any surfactant. Treatment at 50 deg C for 5 min with 50 ppm sodium hypochlorite solution decreased the bacterial counts to about l/1000 of the initial count and also to about 1/100 of that treated with 100 ppm at room temperature.
