Possibility of determination of polycyclic aromatic hydrocarbons in food products by mass spectrometric methods has been studied. To improve the sample preparation procedure, the suitability of different sorbents (acidic and neutral alumina, florisil and silica) was tested. The highest sorption ability of interfering substances is characteristic of silica. The time-consuming sample preparation method including saponification step for analysis of fish products can be shortened. The high-performance liquid chromatography - tendem mass spectrometry method was developed for analysis of benzo(a)pyrene. The parameters of method were compared with those of gas chromatography - mass spectrometry method.
