Determination of the thermophysical properties of carabeef

Thermophysical properties were measured for both fresh and dried carabeef conditioned to approx. 70 percent, 60 percent, 50 percent, 40 percent and 30 percent moisture content, wet basis by intermittent drying at 70 deg C, atmospheric pressure. Carabeef was found to contain 78.25 percent, water, 1.17 percent, fat, 1.09 percent ash and 19.54 percent protein. Apparent density was measured by water displacement. Values ranged from 1025.74 to 1111.46 kg/cu m and obeyed a third-order polynomial. True density values were higher and behaved linearly with moisture content. Porosity development was investigated and a third-order polynomial was also found. Specific heat was determined by method of mixtures. Values were within 1.61 to 3.02 kJ/kg-deg C and behaved linearly with moisture content, though lower than theoretical values. Thermal conductivity (TC) was obtained by modified Fitch and heated probe methods for both parallel and perpendicular muscle fibers. TC values ranged from 0.27-0.38 u/lm-deg C and were not significantly affected by fiber orientation in the heated probe method. Results correlated with moisture content via a third-order polynomial. TC values obtained by modified Fitch method correlated neither with moisture nor with structural models. Thermal diffusivity (TD) was computed using experimental values of apparent density, specific heat, and TC from heated probe method, perpendicular geometry. An average value of 0.119 x 10 sup-6 sq m/sec was calculated.
