Proximate composition, macro and micro-nutrients in dried fish and shrimp from Sundarbans coast, Bangladesh

Among dried products, moisture percentages varied from 9.11 to 19.5%. About 10% moisture was observed among Hilha megaloptera, Raconda russelliana, Chirocentrus dorab and Liza parsia. Gadusia chapra, Coilia dussumieri, Satipinna taty, Leiognathus fasciatus, Pomadasys hasta, Johnius arhentatus, Polynemus indicus, Lepturacunthas savale, Rastrelliger kanagurta, Pampas argenteus, Cynoglossus cynoglossus, Parapenaeopsis stylifera, Acetes indicus and Mugil cephalus contained 10-15% moisture. The remaining- 3 species Harpadon nehereus, Sillago sihama and Lates calcarifer having moisture ranging from 16.39 to 19.5%. The highest moisture content was observed in H. nehereus, while lowest in Liza parsia and Hilsha megaloptera. Most of the dried products contained good levels of protein. Highest protein was recorded in the two shrimp species, and P. stylifera and P. indicus, with 74%. But the lowest range of protein percentage was observed in R. russellia na (59.26) and P. hasta (62.33). More than 70% protein was observed in S. sihama, J. arhentatus, L. savale and R. kanagurta. Other dried products contained 65-70% protein. More than 15% lipid was found in R. russelliana, C. dussumieri, P. hasta, J. arhentatus, L. parsia, P. indicus and P. argenteus. H. megaloptera, S. taty, L. fasciatus, L. savale, L. calcarifer and M. cephalus contained more than 10% lipid. Lowest range of (5.55-7.42%) lipid was observed in T. hamiltoni, S. sihama and two shrimp species namely Parapenaeopsis stylifera and Acetes indicus. Highest and lowest lipid percentages were in P. argenteus and T. hamiltoni, respectively. Ash percentages varied from highest 20.79% in T. hamiltoni to lowest 7.62% and 9.65% in J. arhentatus and P. argenteus, respectively. Most of the dried products contained ash percentages between 11.41 to 19.83%. In the case of macro- nutrients concentration, most of the dried products contained 2.6 to 4.7% Ca. Lates calcarifer and M. c e phalus contained exceptionally low level (0.3-0.4%) of Ca and P. argenteus (1.1%). Magnesium and phosphorus content were low and within the ranges of 0.23 to 0.78% and 0.07 to 0.53%, respectively. Sodium percentages was found around 1 (0.5-1.3%) with the exception of P. stylifera (1.6%). Potassium level varied from 1.14 to 1.76% in dried products under study. Among micronutrient, Cu, Zn and Fe, most of the product contented good iron level (120-969 mug/g). Zinc concentration varied from 40.8 to 102 mug/g. Low level of C was observed 45.6-51 mug/g in the two shrimp species and 0.7 to 19.6 mug/g in the fish.
