Proximate composition and some technological properties of African nutmeg (Monodora myristica) seeds

These studies were conducted in the Department of Agricultural Engineering, Rivers State University of Science and Technology, Nigeria during 2006. Chemical and some technological properties of African nutmeg (Monodora myristica) seeds were investigated. The analytical results showed that nutmeg seed possessed moisture content (14.7%), protein (9.1%), oil (29.1%), food energy (458 kcal/100g), fibre (25.9%), ash (2.3%) and acidity (8.3%). In same vain, mineralogical analysis using inductively coupled plasma atomic emission spectrometer, was conducted. The result revealed that potassium, phosphors, calcium and magnesium were the predominant elements in seeds. Similarly, technological properties studied were unit mass, unit volume, geometric mean diameter, sphericity, bulk density and true density with average values of 0.89g, 1008.4mm3, 12.43mm, 0.74, 488.76kg/m3 and 830.54 kg/m3, respectively. Information of these technological properties could be useful in process machine design. On the other hand, knowledge of chemical properties is important for nutritional labeling as a dietary information.
