Influence of harvest time and storage conditions on quality of some horseradish (Armoracia rusticana Gaertn.) local types

In 2-year experiment chemical composition of four local types of horseradish in relation to storage conditions was investigated. Storage conditions were: a cold room, a pit and the ground in a field. Horseradish roots were harvested in autumn in two terms - in the first and the third decade of October. Immediately after harvest and also after storage there were investigated: allyl isothiocyanate content, vitamin C and sugars content. Vitamin C content was higher at the later term of harvest. Vitamin C and allyl isothiocyanate content decreased during the storage period and this tendency was bigger in case of roots stored in the cold room, than in case of roots stored in the pit or in the field. Reducing sugar content increased initially, but then was stable. At the same time sucrose content decreased significantly
