[About mineral composition of cognac spirits]

The mineral composition of local (Dagestan, Stavropol Territory) and foreign (Armenia, Ukraine, France) cognac spirits (CS) of different ripening periods were explored. The cations Na, K, Ca, Mg, NH4 and anions F, Cl, NO2, NO3, PO4, SO4 were identified by combined method of ion chromatography and atomic absorption spectrophotometry. All assays contained Na, K, Mg, F, Cl, SO4 ions, but K, Ca, Mg were not found in young CS (each one in 1 CS propertly) and K was not found in 1 CS of 4-year period, Mg was absent in 3 CS. The first assays of young CS were national, the follow were French. The NH4 and NO2, NO3 ions were not found in many assays, that could be explained by their content in volatile compounds or by the last one absence in distill wine materials. Younger CS were described by absence or little content of PO4 anions. Total content of mineral compounds and some ions (Na, K, Ca, Mg, SO4) was higher in many assays of longer ripening period, Ukrainian CS were a demonstrative example. The conclude was made about Dagestan CS ageing in old oak burrels: Na, K, Ca, Mg and PO4, SO4 ions extracted mainly from oak wood. It was an interesting fact that F and Cl anion content sharply decreased at CS ageing because of their high volatility or their precipitating in a form of slightly soluble salts.
