The conduct of microorganisms under the defined conditions in the operating conditions was verified. There were assigned the localities and working operations, which are risk for the production of meat products and there is necessary to monitor them. We verified efficiency of two alcaline and acid disinfecting agents to selected surfaces under the defined conditions. we determined optimal model in relation to contamination of surfaces. We verified selected linear mathematical models for the modelling of growth of selected pathogens and we utilized available program for the modelling PMP6.0. we determined economic addition of application predictive models and we made database of informations about predictive microbiology. We established and verified the method Salmonella Tecra Unique for the quick determination of salmonelas in the meat and meat products.
