STUDIES ON SOME QUALITY TRAITS OF LAMB MEAT FROM THE THRACIAN MERINO BREED AND THRACIAN MERINO  MOUTON CHAROLLAIS CROSSES

The study was carried out in the Institute of Agriculture, Stara Zagora with two groups of lambs – 10 purebred Thracian Merino lambs and 10 crosses of Thracian Merino with Ѕ blood of Mouton Charollais. The groups were allotted and the lambs were fattened up to the age of 115 days. At this age, 4 lambs of each group with an average weight were slaughtered. A complete slaughter analysis was carried out. The chemical, mineral, amino acid and fatty acid compositions of representative meat samples were determined. The analyses were performed at the Scientific Research Laboratory of the Faculty of Agriculture at the Thracian University – Stara Zagora. Both classic and modern methods of analysis and statistical processing of results were used. There were no statistically significant differences in the chemical and mineral composition or in the content of saturated and non-saturated fatty acids in the lamb meat from both groups. A balanced ratio between the different categories of fatty acids in the meat fat was observed. The amino acid content in the meat of purebred Thracian Merino lambs was similar to that of crosses with Ѕ blood of Mouton Charollais. Differences were found only with regard to the content of the non-essential amino acids proline and alanine. The oxidative capacity of meat was higher in crosses of the Thracian Merino with Ѕ Mouton Charollais blood.
