Today, the quality of fresh fruits is always measured using manual tools, a measure which remains destructive for the fruit. The aim of the presented study was to measure the quality (sugar, firmness and acidity) of two apricot and two pear varieties with non destructive near-infrared spectroscopy method. Models of prediction of various features of fruit quality were therefore elaborated. At first, global models that do not take into account the genetic variability were built. Then, models dedicated to each variety were elaborated to improve the precision of prediction. Soluble solids content could be determined with a precision of 0.67 °Brix on apricot and 0.78 °Brix on pear. Concerning firmness, the precision was about 3.5 DI on pear and between 5 DI and 8 DI (Durofel Indice) on apricot. The confirmation of such results would allow to hope the development of a non destructive measure of the fruit quality in orchard.
