The relaxation phenomena of radicals induced in irradiated fresh mangoes

Using the gamma-irradiated fresh mangoes followed by freeze-drying and powderization, electron spin resonance spectrometry of specimens was performed. As a result, a strong single peak in the flesh, the pericarp and the seed was observed at g = 2.004 and attributed to organic free radicals. When relaxation times of the peak was calculated using the method of Lund et al., Tsub(2) showed dose responses according to increasing doses while Tsub(1) was almost constant. Dose responsibility of the relaxation time Tsub(2) obtained from fresh specimens of the mangoes could be measured regardless of the preservation period of 1 to 9 days following gamma-irradiation. Therefore, there might be possible to detect the irradiation treatment of fresh mangoes using relaxation time Tsub(2).
