Prevalence of Yersinia enterocolitica 4/O:3 in pig tonsils and by-products in two slaughterhouses in Latvia

The total amount of 180 pig tonsils, originated from 18 pig herds and 210 samples of by-products were collected in two Latvian slaughterhouses from July, 2007 to August, 2008. Samples were tested according to the method of the International Organization of Standardization ISO 10273:2003. Cold-enrichment was carried out for one to two weeks. All Y.enterocolitica isolates were biotyped and serotyped. The prevalence of Y.enterocolitica was significantly higher for pig tonsils and by-products samples, collected in the slaughterhouse A then in slaughterhouse B (p is less than 0.01). The highest prevalence of Y enterocolitica was found on pig tongues at both slaughterhouses, accounting for 53% and 33%. The prevalence was high for liver as 33% to 13%), followed by lung 27% to 6% and heart 20% to 13% for slaughterhouses A and B, respectively. The high number of Y enterocolitica positive tongue, heart and lung samples can be explained by the fact that by-products on the pluck sets were located close to the pig tonsils. As the prevalence was significantly higher for certain types of by-products -liver, diaphragm and kidney at the slaughterhouse A, possible that evisceration process, especially handling of pig tonsils, could have an impact to the contamination rates with pathogen on offals. Results of study indicate that it is not possible completely avoid the by-products contamination with Yenterocolitica at the slaughter of Yersinia positive animals.
