Rice price and grain quality characteristics

This paper derived the implicit price of the different grain quality characteristics of the rice found in the retail market. Hedonic price analysis was used to answer the question, how the different grain quality of the marketed rice affects price variability. The data used in the analysis came from a survey of rice retailers. The results of the analysis revealed that the grain characteristics that significantly affect rice prices are, total head rice, presence of brewer's grain, discolored grains, and red streaked grains. Chemical attribute like amylose content and moisture content also significantly affects rice prices. Chalkiness, on the other hand is not significant grain characteristic anymore. This may imply that consumers are not concerned anymore with respect to chalkiness as some varieties that have chalkiness, e.g., IR64 has been very well accepted in the market and commands higher price. Another possible reason is that there had been efforts in breeding to reduce chalkiness. The results obtained from the analysis can serve as basis for breeding as well as post harvest handling operations. Breeders need to look and target improvement in the grain quality attributes that are within their control, e.g., amylose content and milling and head rice recovery. Since physical appearance of the grain is more post harvest related than breeding, an efficient post production handling of rice is necessary for the stakeholders in the rice industry to benefit more in the value chain.
