Microstructural properties of potatoes

The potato tuber was studied by means of the methods of optimal microscopy and image analysis. Tubers of varieties Picasso, Laura and Red Anna were tested after storage in standard and nonstandard conditions. The methods of taking of digital images of tissue are presented. The possibility of method of computer image analysis is analysed. Computer aided measuremet is discussed. The geometrial properties of cell structure were evaluated. The area of cells, the perimeter of cells, the circularity and Feret diameter were determined.
