Risk for health in population of Krasnoyarsk territory be conditioned of food products contamination heavy metal

The structure and dynamics of food consumption (the main product groups only) are analyzed for the population of the Krasnoyarsk Territory in 2000-2006. In 2005-2006 average daily doses of heavy metals coming with foods are determined at the base of analysis of 580 samples. The population consumes meat, fish and bread at a level close to the average one in the Russian Federation and does milk, eggs, vegetable oil, fruits and vegetables, sugar less than in average over Russia. Rural population consumes fish, sugar, bread, confectionary products, fats and potato more than urban one; rations of the urban population have more meat, eggs, fruits and soft fruits. Contamination level of the same products differs in towns and in the country. As, Cd, Pb and Hg content in the vegetables, fish, bakery and confectionary products is higher in the urban conditions and it is higher in the milk and meat in rural conditions. Individual carcinogenic risks are estimated as 5.68*10E-3 for a town and as 6.33*10E-3 for a village while they appear at food consumption. Arsenic makes the biggest contribution in these indices and Cd and Pb do the smallest one. The maximum risks are caused by vegetable, bread and milk intake. Population risks of oncologic diseases are estimated as 236 additional cases of disease per annum. Noncancerogenic risks of diseases of central nervous system are estimated as very high and the ones of kidneys diseases are done as enhanced. These risks are also caused by consumption of vegetables, bakery and milk products.
