[Theoretical and practical foundation of the main factors forming quality of milk materials at modern production]

The research aim is to study, to analyze and to develop a management system of milk raw material quality by manipulation with genotype and phenotype factors. The composition and quality of bulk milk is studied in the zones of milk processing factories of the Stavropol Territory; a complex analysis of dairy cattle feeding and keepingin different zones of the Territory; firstly the method of bioluminescence of adenosine triphosphate-meter for hygiene and sanitary condition monitoring of milk production and for determining somatic cell number in a lactoserum. A technical regulation is developed for milk magnetic treatment that improves its technological properties. It is recommended to apply rations of summer monotypic feeding and to optimize rations with computer programs. It is found out that start milk bacterial contamination has not to exceed the meaning of 50 000 colony-forming units per cubic centimeter. It is defined that somatic cell amount in cheese whey is 49.5% at their level in milk of 300 000 per 1 ml. It is assigned that cows of the 2 and 3 calving have somatic cells in their milk increasing by 60% and cows after 6-7 lactations have about 1000 000 per cubic centimeter that comes to critical level. The higher technological effectiveness of free-stall housing is proved: only 8 risks of a high level are determined at this housing system in compare with 14 ones at tethered housing. A pay method of milk raw materials is developed for purchases on the base of data of milk composition, density and correlations between these properties
