[Short-term storage of cherry fruit in the bags of the farm Stepac at low temperatures]

The efficacy of Stepac bags providing the creation of modified atmosphere (MA) to improve the storability of cherry berries (CB) keeping their storage quality and getting available for consumers. CB of 2 cultivars (Lebedyanskaya – mid-ripening, Tamaris – late-ripening) were harvested into plastic containers in volume of 1.5 l (the weight of a container with CB – 500-700 g); after pre-cooling the containers with CB were placed in bags and sealed; the storage temperature was 0 to -2 degrees C. The natural fruit loss was determined after 10, 20 and 30 days of storage (the storage period depended on the cultivar), as well as changes in the content of organic acids, dry soluble matters, polyphenols and ascorbic acid after 20 days of storage in MA conditions comparative to the normal atmosphere (control). It is concluded; a possibility to store CB in MA created in Stepac bags for 20 days and longer without great losses of commercial and gustatory qualities; the storage of CB in MA provides reducing the losses of weight more than 3 times compared to the control, as well as maximum preservation of BAS; the whole cycle: storage-transport-selling of CB should be performed by using special equipment (refrigerators, shop-window refrigerators)
