[Infusions on the base of untraditional raw materials of the Far East]

Formulas were developed and trade analysis of sweet infusions (SI) was done by using wild plant raw materials of the Far East Region: Viburnum burejaeticum Regel berries (VBR), Amur corktree (AC) and japonica, as well as dried purple coneflower (PC) herb. There were obtained 5 SF: Vstrecha based on VBR and japonica; Osenniy sad – based on japonica and PC; Letniy vecher – based on VBR; Barkhatnyi sezon – based on japonica and AC; Yantarnaya – based on VBR, japonica, PC and AC. All the developed SF are transparent liquids having bright intense color, taste and aroma specific for each type of plant raw materials. SF Osenniy sad and Barkhatnyi se had the lightest orange yellow tints as their preparation involved alcoholized fruit drink of japonica fruits, which have almost no dark stains. The aroma of all SF is pleasant, peculiar to the used raw materials. In particular, the alcoholized fruit drink from japonica berries imparts SF Vstrecha, Barkhatnyi sezon and Yantarnaya a honey quince taste and aroma, and Letniy vecher has a pleasant chocolate taste due to the alcoholized fruit drink. The values of strength of the SF are in the range of 13.8 to 31.6 g/100 cub. cm. corresponding to the standards. The nutritional value of SF is formed high physiological importance due to the presence of BAS, anti-alcohol and anti-radical factor – polyphenols and other important components
