Effect of nitrogen fertilizer rate on bread wheat quality

This study was conducted upon two stages, on farm-trial, to evaluate the effect of nitrogen rate on wheat production and presented the first stage, was carried out in Hudeiba Research Station field in Karu soil at two successive seasons. (2002/3 and 2003/4). The present study was conducted to evaluate the effect of nitrogen treatments on wheat grain quality. Wheat grains were tested for physical, chemical and functional properties at Atbara Flour Mills. The main findings on the above mentioned aspects were as follows: The effect of nitrogen fertilization rate on the physical properties of wheat grain indicated that, increasing of nitrogen rate was met by a decrease in the thousand kernel weight (from 38.03 to 36.87) and an increase in the test-weight (from 82.5 to 84.2). F or chemical properties, there was positive relationship between nitrogen fertilization rate and protein content (the increase from 9.4 to 14.3) and wet gluten (which increase from 21.6 to 37.9) while increasing rate of nitrogen decreased the ash content values (from 1.95 to 1.53). It is worth noting that, the moisture content and Alpha-amylase activity results, gave low values. Also increasing rate ofN was met by increasing of bread specific volume (from 2.4 to 3.2) while extraction rate decreased (from 70.7 to 60.0). The study clearly pointed out that, the protein content of wheat grain and bread making quality could be significantly improved by applying nitrogen fertilizer of rate 86 kg N/ha
