The aim of the paper is to provide an overview on the role of meat in the human nutrition. The paper will focus on the adaptation of the humans to the omnivorous diet and the nutritional value of meat and its contribution in satisfying the nutrient requirements. The influence of meat intake on the incidence of some chronic diseases will be described and the fact that re-examination of epidemiological data showed that higher risk for cancer was wrongly ascribed to high meat intake, it is far more associated to low fruit and vegetables intake and to other life-style risk factors. At the end an overview trough current recommendations concerning meat intake will be given. Because of its high nutritional value meat preserves important role in a prudent human nutrition.
