Influence of betaine on the physicochemical composition of muscle of different metabolic type in Danube White pigs | Влияние на бетаина върху физикохимичния състав на мускули с различен метаболитен тип при прасета от породата Дунавска бяла

The experiment was carried out with male Danube white pigs. The animals were devided in two groups –control and experimental, as for a period of 30 days the diet of the experimental group was supplemented with 0.1 % betaine. Physicochemical composition is studied in m. Longissimus dorsi, m. Semimembranosus and m .Supraspinatus, which are of different metabolic type. The values of pH 45 min post mortem, pH 24 h post mortem, colour - R/525nm, water holding capacity, contents of myoglobin, fats, protein, moisture and ash are determined and the influence of betaine on these traits is studied. Dietary betaine supplementation - 0.1% influenced significantly the colour which is darker in the three muscles of the animals from the experimental group - P0.05. Significant differences - P0.001 between the muscles are found in pH24, colour and myoglobin content, due to their metabolic type. The highest pH24 and myoglobin content are observed in m. SP, followed by m. SM and m. LD. According to the values of colour the muscles are arranged as follows m. LDm. SMm. SP. Significant differences are found between muscles in the fat content and moisture - P0.01, protein - P0.001 and ash - P0.05, as well as significant relationships with high correlation coefficients - P0.05, P0.01 between these traits.
