To compare meat tenderness (WBSF) of Nelore and F1 (A. Angus x Nelore cows) 36 young bulls (19 Nelore; 17 F1) were lot fed for 128 days, and slaughtered at 23 months of age. Rib cuts (m. Longissimus dorsi, 9-11th ribs) were vacuum packed and aged for 14 days at 1 deg C, and then analysed for WBSF (Warner-Bratzler shear force) and pH. There was difference (P<0.05) between pH means (F1=5.8; Nelore=6.2) with a high incidence of DFD (pH>6.0) meat in the Nelore, which was due to a more stressful response of the Bos indicus breed to pre-slaughter handling. No differences for cooking losses were found, but there was a trend towards lower (P=0.08) losses in the Nelore breed samples, due to the higher pH in them. WBSF did not differ (P>0.05) between group means which is compatible to the abnormal pH in the Nelore. When the samples with pH >/= 6.0 were removed from the analysis, the WBSF mean of the Nelore group increased 1.0 kg (4.6 to 5.6 kg), but the F1 mean (4.9 kg) did not change. The high incidence of DFD samples made the comparison more difficult, but once high pH samples were removed a trend towards lower WBSF in the F1 group became evident.
