Guinea Fowl (Numida meleagris) explotation is an option for the rural development in some zones of Extremadura. The characterization of meat quality has been carried out by good results. The aim of this study fatty acids quality. The obtained results are interesting enough. It is important to emphasize the content of C20 group, specially the C20:4, as precursor of the prostaglandins, which physiological role is fundamental in the human health.
