Cage handling of layers is characterized with large number of hens confined in small space with automatic feeding, water supply and removal of droppings. These conditions influence health and laying of hens and impact farm environment. Overpopulated confinement deprive hens of beneficial influence of natural habitat: free movements, fresh air and sunlight, so introducing of technological procedures in aim to achieve optimal conditions of ambient within confined area and therefore promote health and productivity was necessary. Although optimal ambient conditions were achieved technologically and selective breeding gave rise to increased productivity, contemporary farming was followed by decreased resistance of hens and therefore increased health risk in layers as well as in consumers of eggs and egg products. Intensive laying farm also increase risk for surrounding environment. The basic aim of contemporary egg production is to fulfil the market demand for eggs and to meet conditions of biosafety and reduce health hazard for consumers. This paper is a review of risks and basic conditions of safe and hazardless production of layers and consuming eggs.
