Structural changes on Serbian milk market | Strukturne promene na trzistu mlecnih proizvoda u Srbiji

Production, processing and retail of milk and milk products is one of the most important segments of Serbian agrobusiness. In this article structural changes on Serbian milk market during the period of 2006-2008 were analyzed. Those changes include market positions of dairies, as well as their structure of production. Data revealed that two among the biggest dairies, and middle sized dairies increased their market share. Production structure of 5 biggest dairies, which process 60% of delivered milk, significantly changed in that period. Focus in structure of their production was moved from cheese production to diversified ranged of fermented milk products. Share of liquid milk production remais on the same level, but with divergent movement. Production of UHT milk increased and pasteurized milk production decreased.
