Determination of vitamins E, omega-3, fatty acid and phytosterol pistachio nuts of some varieties | Bazı antepfıstığı meyvelerinde vitamin E, omega-3 yağ asitleri ve fitosterol kapsamlarının belirlenmesi

إنجليزي. In this study, registered Antep pistachio nuts such as Uzun, Siirt and Ohadi were investigated for Vitamin E, Omega-3, 6, 9 and phytosterol contents. In addition, protein, calcium, magnesium, iron, copper, zinc and manganese contents of pistachio nuts were determined. According to the results of 2004 harvesting year, there was no significantly difference between Uzun, Siirt and Ohadi for Vitamin E and Omega 3. However, total sterol and Omega-6 contents were the highest in Ohadi. After harvesting and two months at 2005, Vitamin E, Omega-3, 6, 9 and phytosterol contents were determined at the roasted and unroasted Uzun, Siirt and Ohadi pistachio nuts during storage for 2 months periods (2 and 4 months). At the end of the two month storage period, Vitamin E content was decreased. However, after 4 months, it was nearly constant. Also, The effect of storage and roasting operations on the Omega-3 was statistically not significant. In addition, the difference between the species was not determined. Omega-6 was found as the highest in Ohadi among the species based on roasting and storing operations. Uzun and Ohadi had the highest amount of Omega-9. Additionally, total sterol was the highest in Ohadi.

اللغة التركية. Bu çalışma tescil edilmiş, Uzun, Siirt ve Ohadi antepfıstığı çeşitlerinin Vitamin E, Omega 3, 6, 9 yağ asitleri ve fitosterol miktarları incelenmiştir. Ayrıca bu çeşitlerde protein, kalsiyum, magnezyum, demir, bakır, çinko ve mangan miktarları belirlenmiştir. Yapılan analizler sonucunda 2004 yılında Vitamin E ve Omega 3 yağ asitleri yönünden Uzun, Siirt ve Ohadi çeşitleri arasında önemli bir farklılık belirlenmemiştir. Ohadi çeşidinde, toplam sterol ve Omega-6 yağ asidi miktarı en yüksek olarak tespit edilmiştir. 2005 yılında hasattan 2 ay sonra, depolama esnasında 2'şer aylık dönemler (2 ve 4 aylık depolama) halinde Uzun, Siirt ve Ohadi çeşitlerinin kavrulmuş ve kavrulmamış meyvelerinde Vitamin E, Omega 3-6-9 yağ asitleri ve fitosterol miktarlarına bakılmıştır.
