A study on microbiological chemical qualities and moulds flora of Kup (Crock) cheese produced in Sivas province | Sivas yöresinde üretilen Küp peynirinin mikrobiyolojik, kimyasal ve küf florasının belirlenmesi

إنجليزي. In this study, moulds flora of Küp cheese was observed and chemical, microbiological properties of 25 Küp cheeses collected from Sivas were determined. According to the results, the average values for total mesophilic aerobic bacteria, psychrophilic bacteria, yeast and mould observed were as the follows; 7.31 log10 cfu/g, 6.78 log10 cfu/g, 7.57 log10 cfu/g and coliform bacteria was not observed in 25 samples. According to the chemical analysis results, the avarega values of Küp cheeses were; total solids 49.51%, fat 9.44%, fat in solid 18.61%, salt 4.53%, ash 13.28%, protein 24.74, titratable acidity 0.87 la % and pH degree 5.82. The results show that the genus most frequently isolated was Penicillium which represented 93.5 % of total isolates.

Bu çalışmada, Sivas yöresinde üretilen Küp peynirlerinin mikrobiyolojik, kimyasal özellikleri ile küf florası araştırılmıştır. 25 adet örneğin incelenmesi sonucunda ortalama toplam mezofil aerob bakteri, psikrofilik bakteri, maya-küf sayıları sırasıyla 7.31 log10 kob/g, 6.78 log10 kog/g, 7.57 log10 kob/g olarak tespit edilmiştir. Örneklerin hiçbirinde koliform grubu bakteriye rastlanmamıştır. Kimyasal analiz sonuçlarına göre küp peynirlerinin ortalama kurumaddesi %49.51, yağ miktarı %9.44, kurumaddede % yağ miktarı %18.61 ve tuz miktarı % 4.53, kül miktarı % 13.28, protein miktarı % 24.74, titrasyon asitliği %0.87 laktik asit (la), pH değeri 5.82 olarak bulunmuştur. Yapılan tanı çalışmaları sonunda izole edilen suşların % 93.5'inin Penicillium cinsine ait oldukları belirlenmiştir.
